Asparagus with Dijon Vinaigrette Recipe
Looking for a new way to make Asparagus? This French recipe is a great side dish for the holidays. This recipe serves 4, with 6 spears per serving.
INGREDIENTS:
24 Fresh Asparagus Spears
Vegetable Oil Spray
¼ Teaspoon Grated Lemon Zest
1 Tablespoon Fresh Lemon Juice
1 Tablespoon Low-Sodium Chicken Broth
¾ Teaspoon Dijon Mustard
½ Teaspoon Olive Oil
Dash of Black Pepper
2 Large Lettuce Leaves
DIRECTIONS:
1. Snap off or cut off the woody base of the asparagus.
2. Wash your asparagus well.
3. In a baking sheet, arrange your asparagus in a single layer.
4. Spray your asparagus with vegetable oil spray.
5. Bake for 10 minutes at 500 degrees or until crisp-tender and lightly brown.
6.While Your asparagus bakes, combine all of the other ingredients, except the lettuce leaves, in a container with a lid (like a jar).
7. Close the container and shake well.
8. Remove asparagus from oven.
9. Line your plate with lettuce leaves and top with your asparagus.
10. Drizzle your vinaigrette over the asparagus. Toss your asparagus lightly to coat.
11. This can be served immediately, cooled or chilled.
