Bruschetta Chicken Skillet Recipe

This is a great new recipe for Bruschetta chicken. It’s healthy and delicious. It makes a great dish for a last minute dinner party.Prep Time: 10 Minutes
Total Time: 40 Minutes
Serves 4

INGREDIENTS:

1/4 cup KRAFT Sun-Dried Tomato Dressing
4 small  boneless skinless chicken breast halves (1 lb.)
2 large red peppers, chopped
2 cloves  garlic, minced
2 cans (14-1/2 oz. each) pasta-style or Italian-style diced tomatoes, undrained
1/2 cup  water
2 cups instant white rice, uncooked
1 cup  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1 large tomato, chopped
2 Tbsp.  chopped fresh basil

DIRECTIONS:

1. Heat Kraft Sun-dried tomato dressing in large skillet over medium heat.

2. Add boneless skinless chicken breast halves, red peppers and garlic to the skillet and cover.

3. Cook 10 min. or until chicken breasts are cooked through (165ºF), turning after 5 min.

4. Remove chicken breasts from skillet and cover to keep warm.

5. Add canned tomatoes and water to the skillet.

6. Stir in white rice; bring to boil.

7. Reduce heat to low; simmer, uncovered, 10 min.

8. Meanwhile, combine Kraft Shredded Low-Moisture Part-Skim Mozzarella cheese, chopped tomatoes and basil.

9. Return chicken breasts to skillet and sprinkle with cheese mixture. Cover.

10. Cook 5 min. or until chicken is heated through and cheese is melted.
