Chocolate Crinkle Cookies

When you’re looking for easy treats to send to distant relatives or loved ones in the military, this cookie fits the bill.

INGREDIENTS:
3/4 cup butter, melted
1/2 cup unsweetened cocoa powder
1 cup sugar
2 large eggs
2 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 6-oz. bag semisweet chocolate chips
3/4 cup confectioners’ sugar

DIRECTIONS:
1. Mix the melted butter, cocoa powder and sugar in a large bowl.

2. Beat in the eggs and vanilla extract.

3. Combine the flour, baking powder, baking soda and salt in a medium bowl.

4. Slowly mix in the eggs and vanilla.

5. Stir in the chips.

6. Refrigerate for 2 hours or overnight.

7. Preheat the oven to 350 degrees.

8. Form the dough into 1-inch balls and roll in confectioners’ sugar.

9. Bake on an ungreased baking sheet for 12 minutes.

* Makes 25 to 35 cookies.
