Herbed Batter Bread Recipe
Herbed Batter Bread is another delicious Italian recipe that is easy to make and tastes great toasted. Herbed Batter Bread is even great when stale and makes delicious bread crumbs or cube for croutons. We made this several times for church dinners and it was always a big hit.
Things You’ll Need:
1 package (1 tbsp) active dry yeast
1/2 cup of warm water (105 degrees F)
1 cup of skim milk
2 tbsp of healthy margarine
Egg substitute equivalent to 2 eggs or 2 eggs lightly beaten
3 tbsp honey
2 tbsp nonfat plain yogurt
1 tbsp Italian seasoning
1 tsp salt
4 cups all-purpose flour
Vegetable oil spray
Step 1
To make Herbed Batter Bread, combine yeast and warm water in a large mixing bowl and set aside.
Step 2
Heat milk and margarine over low heat, in a small sauce pan, just long enough to melt the margarine.
Step 3
Add eggs or egg substitute, honey, yogurt, Italian seasoning and salt to yeast mixture and blend thoroughly.
Step 4
Stir in the flour. Once combined, beat at least 100 strokes by hand or for 1 minute with an electric mixer. You’ll notice this is a batter not a solid dough.
Step 5
Cover your batter with plastic wrap and let stand in a warm place until batter is about three times it’s starting size (about an hour).
Step 6
Spray four, 5 1/2 inch loaf pans with vegetable oil spray. Set aside.
Step 7
Preheat oven to 350 degrees F.
Step 8
Stir the batter down and divide evenly among the loaf pans. Cover again and let rise until batter is almost to the top of the pans (about 20 to 25 minutes).
Step 9
Bake breads for 35 minutes or until a cake tester inserted near the center of the loaf comes out clean.
Step 10
Let cool for about about 15 minutes before removing from the pans. Cut into 8 slices per loaf. Serve hot, warm or cool.
