Jambalaya Recipe
This southern recipe for Jambalaya is sure to make your mouth water. This is a healthy recipe that you can eat even if you are in the early stages of diabetes.
INGREDIENTS:
2 tbsp. extra-virgin olive oil
1 lb. chicken thighs, cut into pieces
1 lb. turkey andouille sausage
1 lb. shrimp, peeled and deveined
1 lb. catfish, cut into small pieces
1 large onion
1 bell pepper
3 cloves of garlic, minced
4 stalks of celery
2 tbsp. Creole seasoning
16 oz. can of tomato paste
4 tomatoes, peeled and chopped
8 cups of chicken broth
2 bay leaves
4 cups of long-grain brown rice
Salt to taste
1/2 cup of chopped parsley and chives
DIRECTIONS:
1. Place olive oil in a large dutch oven or large pot over medium heat.
2. Once hot, add the chicken and sausage.
3. Cook for about 5 minutes.
4. Add shrimp, fish, bell peppers, garlic and celery.
5. Cook until lightly brown.
6. Add Creole seasoning, tomato paste, tomatoes and chicken broth. Simmer.
7. Add bay leaves and stir in rice. Add salt if desired.
8. Reduce to a simmer and cover.
9. cook until liquid is almost evaporated. About 30 minutes.
10. Before serving, remove bay leaves and stir in herbs.
