Potato Cake Recipe
These potato cakes are so easy, you will never have to wonder what to do with your leftover mashed potatoes again. We eat these as a side dish for breakfast but they will work for any meal or even a snack. Potato cakes are a nice change from hash browns or home fries for breakfast.
Potato Cake
Things You’ll Need:
Mashed potatoes (leftover and cold work best)
Salt & Pepper to taste
Non-stick spray
Griddle or frying pan
Shredded Cheddar (optional)
Step 1
Spray your griddle or frying pan with non-stick spray and heat on a medium to medium low until the griddle is warm.
Cold Leftover Mashed Potatoes
Take some mashed potatoes (cold works best) and make a patty (just like a hamburger). Put the patty on the warm griddle. Repeat with as many patties as you need to feed your family.
Step 3
Lightly brown on both sides, making sure the center is warmed.
Lightly Brown Each Potato Patty
Possible variations:
1. Sprinkle cheddar cheese on top of your patty.
2. Add some ketchup (like a hamburger).
3. Shake on some salt and pepper.
4. Put a few strips of bacon on top of the patty (cook it first).
5. Put a dollop of sour cream on it.
6. Country style white gravy
Step 5
Serve With:
1. A few slices of bacon
2. A sausage patty
3. A breakfast steak
4. A side serving of ham
5. A side of baked apple
6. A bowl of fresh fruit
7. Two (2) eggs (done the way you like)
8. Whole wheat toast (or white if you prefer)
9. Biscuit, croissant, English muffin or bagel
Step 6
To spice up your potato cake, try these variations:
1. Add garlic to the potatoes before making patties.
2. Add cheese and bacon to the potatoes before making the patties.
3. If you had carrots or broccoli leftovers, chop into small pieces and add to the potatoes before making into patties.
